Warm Asparagus Salad

Serves: 6-8 as a side Prep time: 15 min Cook Time Time: 30 min Total Time: 45 min

Ingredients

1 lb asparagus cut into 2-inch pieces

2 tbsp olive oil

1 large white sweet onion, chopped small

1 tbsp butter

1 tsp Herb’s Crushed Garlic

1/4 cup pinenuts

pinch of salt

1 cup crumbled feta

Dressing

1/4 cup olive oil

juice of 1 lemon

salt & pepper to taste

1 tbsp fresh chopped parsley

1 tbsp fresh chopped dill

Directions

Melt the butter in a medium-sized sauté pan over medium heat. Then, add the chopped onion and garlic and cook until the onion slightly softens. Remove from heat. Next, add olive oil and asparagus in a large sauté pan over medium-high heat and cook until the asparagus softens, then set aside. Next, toast the pine nuts in a small pan over medium/high heat with a pinch of salt. (Watch them carefully, as they can burn quickly!) After your asparagus, onion, and pine nuts are done, whisk together your dressing ingredients using a small bowl. Then add everything into a large bowl, toss with the dressing, and fold in the feta! Serve with grilled chicken, beef or salmon. Enjoy!

Notes: Keep a close eye on the onions and asparagus while cooking, as you don’t want them to become mushy. They should still have a firmer but chewable texture.

If you are a dill fan, add extra, as this dish is extra delicious with more dill!
