Souvlaki Meatball & Lemon Rice Bowl

Serves: 4-6 Prep time: 30 min Cook Time Time: 25 min Total Time: 55 min

Ingredients

Lemon Rice

2 cups cooked white rice

1 tbsp salted butter

1 tbsp dried parsley

Zest & juice of 1 lemon

Meatballs

1 lb ground beef

1/2 cup panko

1 egg

2 tbsp souvlaki seasoning

Veggies & Extras

2 med-sized bell peppers chopped

1 med-sized sweet onion chopped

1-2 med tomatoes chopped

1 long English cucumber chopped

1 cup Rendezvous tzatziki

1 cup Rendezvous Greek dressing

1.5 cups feta cheese

Directions

Set your oven to 350. In a bowl combine all the meatball ingredients and roll into 1 inch balls. Place on a baking sheet and bake for approx 25 mins, ensuring they are cooked thoroughly. While the meatballs are cooking, cook the rice as directed. Once cooked, add the butter, parsley, lemon juice & zest (do this while the rice is still hot) set to the side. Chop the veggies. Remove the meatballs from the oven. Next, build your bowls. Start with rice, then your meatballs, veggies, feta cheese and tzatziki. Then drizzle dressing over the top of everything. Serve on it’s on or with warmed pita bread. Enjoy!

Notes:

  • The amount of ingredients will make approx. 4-6 bowls divided depending on portion size.

  • Stick to yellow, orange or red peppers, as green can be too bitter.

  • You can enjoy this bowl, warm or cold.

  • You can make your own dressing or tzatziki, but we really LOVE Rendezvous!
