Toasted Sundried Tomato Basil Orzo

Serves: 4-6 as a side Prep time: 15 min Cook Time Time: 10-15 min Total Time: 30 min

Ingredients

1/4 cup sundried tomatoes in oil diced

2 tbsp fresh basil diced

2 tbsp fresh parsley diced

1 tbsp herbs crushed garlic

1 small shallot finely chopped

2 cups orzo pasta

3 tbsp salted butter

1.5 cups water

S&P to taste

Directions

In a saucepan over med-high heat, melt the butter and add orzo, basil, parsley, sundried tomatoes, garlic, shallot, & S&P. Mix thoroughly. For roughly 10 mins, stirring occasionally, toast the orzo until it starts to brown and the shallot softens. Next, add the water and turn up the element to high until a boil. Cover with a lid and turn down to low. Once you see water evaporated, give a stir, serve and enjoy!

Notes:

This can be enjoyed warm or cold.

Use this recipe as a side dish or a main with grilled or roasted chicken.
