Breakfast Egg Cups

Serves: 4-6 Prep time: 20 min Cook Time Time: 20-25 min Total Time: 45 min

Ingredients

8 Eggs

8 slices black forest ham (sliced on #6 or #7)

2 green onions finely chopped

1/2 cup shredded cheddar

salt & pepper to taste

Directions

Set your oven to 375. Spray a muffin tin with cooking oil. Place a piece of ham in each muffin spot (the ham should be placed in a way you can fill it). Next, crack an egg into each and then top with S&P, green onion & cheddar. Bake in the oven for 20-25 mins. Serve with toast and fresh fruit. Enjoy!

Notes: You can use other toppings such as a drop of Tabasco and cheddar for spicy eggs, Top with hollandaise for a breadless benny, or add avocado and salsa for a mexi egg cup!
