Sweet & Spicy Grilled Turkey Sandwich
Serves: 4-5 Prep time: 30 min Cook Time Time: 10 min Total Time: 40 min
Ingredients
1/2 lb Johnstons thick sliced bacon
1 loaf French bread sliced about an inch thick
300 g Hofstede’s roasted turkey or left over turkey from your holiday dinner
2 cups spinach
4-5 slices monterey jack cheese
Sweet & Spicy Mustard
2 tbsp Keens hot mustard
2 tbsp honey
1 tbsp demerara brown sugar
Caramelized Onions
2 med-sized yellow onions sliced and halved
2 tbsp salted butter
Directions
Preheat oven to 350 and cook bacon on a cookie sheet until the desired doneness. At the same time, the bacon is cooking. Place the onions in a frying pan with butter on medium heat and cook until caramelized. (Make sure to adjust the heat down if needed so they don’t burn). In a small bowl, combine the mustard ingredients and set aside. Once the bacon and onions are done, assemble the sandwich: mustard, cheese, spinach, turkey, onions and bacon between the French bread pieces. Next, place into a panini press for about 3-4 minutes (See note below if you don’t have a press). Serve on its own or with a salad or soup! Enjoy!
Notes:
If you don’t have a press, butter each side of the French loaf slices before assembling and grill in a frying pan or place all the sandwiches on a cookie sheet with another sheet on top of them, press the sandwiches down and bake in the oven at 350 for about 8-10 mins. (If you want the tops a little crispy, remove the top sheet and broil for a minute on high)
