French Onion Gnocchi

Serves: 5-6 Prep time: 30 min Cook Time Time: 8 min Total Time: 38 min

Ingredients

2 med-size white onions halved and sliced

2 med-size yellow onions halved and sliced

3 tbsp salted butter

1 pkg Knorr onion soup mix

2 500g pkg Italissima dry potato gnocchi

3 tbsp olive oil

S&P to taste

1 tbsp fresh thyme

1 tbsp balsamic vinegar

2 cups shredded Gruyere Cheese

Directions

Set your oven to broil high. Melt the butter in a large skillet over medium heat and add onion. Stir frequently. Once the onions have softened, stir in the package of onion soup mix & thyme and cook until the onions are caramelized (approx 20-30 mins), then stir in the balsamic and set aside. While your onions are cooking, in another large skillet, add the gnocchi and toss with the olive oil and s&p. Continue tossing the gnocchi until it starts to brown and slightly crisp and become tender (Approx 8-10 mins). Once your gnocchi is cooked, add it to the caramelized onions and mix until combined. Place the mixture in a large baking dish and top with the two cups of Gruyere cheese. Broil on the middle rack for 5-7 minutes. (Watch carefully so it doesn’t burn, as all ovens are different). Enjoy on its own, with salad or grilled chicken.
