Two Bite Strawberry Tarts
Makes: 40 Prep time: 30 min Cook Time Time: 20 min Total Time: 50 min
Ingredients
Pastry
1 cup salted butter softened
1/2 cup icing sugar
1 tbsp cornstarch
2 cups flour
Filling
1 8oz package of cream cheese softened
1 can sweetened condensed milk
1/3 cup lemon juice
1 tsp vanilla
Topping
1 lb strawberries washed and in half or quarters
Directions
Set your oven to 350. Combine the pastry ingredients in a mixer or by hand until dough is formed. Form the dough into 1/2 inch balls and place into a mini muffin tin or mini tart shell pan. Press each ball down and around the edges to form the tart shape. Repeat for each ball. Next, prink each with a fork. Bake in the oven for 20 mins or until starting to brown. Remove from oven, and with your thumb or spoon, press down the centers slightly and let them cool. While your tarts are baking/cooling, combine all the filling ingredients in a bowl until thoroughly mixed and then put the filling into a large piping bag. Once tart shells are cooled, use the piping bag to fill each tart shell. Top with a piece of strawberry & enjoy! Keep refrigerated for up to 5 days. (If they last that long!)
