Strawberry Rhubarb Oat Bar

Makes: 8-12 bars Prep time: 30 min Cook Time Time: 70 min Total Time: 100 min

Ingredients

Oat Bar

1 1/2 cup flour

1 1/2 cup quick oats

1/4 cup white sugar

1/4 cup demerara brown sugar

1/4 tsp salt

3/4 cup melted butter

Strawberry Rhubarb Filling

4 cups chopped rhubarb

2 cups chopped strawberries

1/2 cup sugar

1 tbsp water

2 tbsp lemon juice

Topping

1/4 cup demerara brown sugar

1 tsp cinnamon

Directions

Set your oven to 350. Combine all your filling ingredients in a saucepan over medium/high heat, and stir frequently until the fruit has softened. Don’t let your fruit fall apart entirely. Turn it off and put it to the side. Next, combine all your oat bar ingredients in a bowl until a nice crumb mixture forms. Set aside 3/4 cups of the crumb mixture. Next, in a 9x12 baking dish lined with parchment, add the bowl of crumb mixture and press it down in the bottom of the dish. Next, top with the strawberry rhubarb filling and sprinkle with the remaining crumb mixture. Then, combine the toppings (cinnamon & sugar) in a small bowl and sprinkle over the top. Pop it into the oven for 70 minutes, then remove it and let it cool completely before cutting ( 2 hours or overnight). Enjoy with a scoop of ice cream or whipped cream for dessert or as a tasty breakfast treat with a cup of coffee!
