Lemon Basil Pasta Salad

Serves: 6-10 Prep time: 25 min Cook Time Time: 10 min Total Time: 35 min

Ingredients

1 454 g box of penne pasta

1 cup parmesan chips

1 cup torn fresh basil leaves

1/2 cup pinenuts

zest of one lemon

juice of one lemon

1 tbsp cracked pepper

salt to taste

1/4 cup of olive oil

Directions

Set oven to 350. Boil the pasta until al dente, strain the water, and run it under cold water until it is cold. While your pasta is cooking, tear the basil leaves and set aside. Then, whisk together the olive oil, lemon juice, lemon zest, salt & pepper in a bowl. Next, place the pine nuts on a cookie sheet and toast for about 5-6 minutes in the oven while tossing them every two minutes. Next, in a large bowl, combine your pasta and olive oil dressing mixture, then add the basil, pine nuts, and parmesan. Serve as a side or as a whole meal with grilled chicken. Enjoy!
