Spinach, Feta & Sundried Tomato Stuffed Pork Tenderloin

Serves: 4-6 Prep time: 25 min Cook Time Time: 90 min Total Time: 115 min

Ingredients

1 twelve inch in length piece of pork tenderloin

2 cups chopped spinach

1/2 cup crumbled feta

1/4 cup sundried tomatoes in oil chopped

1/4 cup diced red onion

1 tbsp Italissima Tuscan herb seasoning

cooking string to tie

Glaze

2 tbsp balsamic glaze

1 tsp Italissima Tuscan herb seasoning

Directions

Set your oven to 350. Combine the spinach, onion, tomatoes, feta & Tuscan seasoning in a bowl. Stir well. Next, cut the tenderloin lengthwise and pull it open, creating a space to put the filling mixture. Add the filling and press down as needed (it will all fit). Fold over each end approx. an inch, tie it with string and place two more ties spaced out in the middle of the tenderloin. Next, mix the balsamic glaze and seasoning in a small bowl and baste onto the tenderloin with a basting brush (Reserve a small amount for later). Place into a baking dish and cover with foil. Bake for 1 hour covered. Uncover and baste with the rest of the glaze, and return it to the oven uncovered for another 30 minutes. Slice and serve with your favourite sides. Enjoy!
