Sheet Pan Grilled Chicken Nachos With Fresh Crema
Serves: 4-6 Prep time: 25 min Cook Time Time: 15 min Total Time: 40 min
Ingredients
1 bag La Cocina thick-cut tortilla chips
2 bell peppers chopped small
1 small red onion chopped small
2-3 cups shredded Cheddar
1 cup crumbled cotija cheese
2 grilled chicken breast
Fresh Crema
1/2 cup sour cream
1 tsp Herbs Crushed Garlic
3 tbsp table cream
2 tbsp diced fresh cilantro
1/2 tsp salt
zest of 1 lime
Directions
Marinate & grill your chicken breasts in your favourite BBQ sauce or rub and shred or chop up and let cool before building your sheet pan nachos. (We like to use grilled chicken because of the smokey charred flavour but you could also pull apart a rotisserie chicken)
Preheat your oven to 350. Then in a small bowl combine the crema ingredients mix thoroughly and place in the fridge until you’re ready to use it. Next, layer the tortilla chips, cheddar, peppers, chicken and onion. Add the cotija to the top layer. Bake for 15 mins and then 1 min on high broil. Drizzle the fresh crema over the top. If the crema seems thick, add another tbsp of table cream. For a little kick, drizzle your favourite hot sauce on top as well! Our favourite for this combo is Maritime Madness candied Jalapeno, as it has the perfect balance of sweet and spicy and pairs well with the crema. You can serve it with salsa, guac or sour cream, but we don’t think you’ll need it! This recipe is so simple you'll be amazed at how delicious it turns out.
