Sweet & Spicy Honey Mustard New Potatoes
Serves: 4-6 Prep time: 15 min Cook Time Time: 25 min Total Time: 40 min
Ingredients
6 cups new potatoes cut into halves or quarters
1/4 cup parsley finely chopped
2 green onions thinly sliced
Honey Mustard Dressing
1/3 cup mayo
2 tbsp honey
1.5 tbsp yellow mustard
1/8 tsp Herb’s Crushed Garlic
1 tsp demerara brown sugar
1 tsp apple cider vinegar
1/2 tsp crushed chilies
Directions
In a large salad bowl, combine all the dressing ingredients and whisk until smooth. Next, boil the potatoes in a pot over high heat until softened (approximately 20-25 minutes). Strain & add the warm potatoes to the salad bowl, toss until coated in the dressing, then fold in the parsley and green onion. Enjoy with your favourite BBQ meats!
Notes:
Cool the potatoes before mixing in the dressing if you prefer to eat cold.
Store in the fridge for up to 5 days
