Salted White Chocolate Pistachio Cookies

Makes: 24 Prep time: 25 min Cook Time: 15 mins

Total Time: 40 mins

Ingredients

1 cup salted butter softened

1/2 cup white sugar

1 1/2 cup demerara sugar

2 eggs

1 tbsp vanilla

2 1/2 cups flour

1/2 tsp salt

1 tsp baking powder

1 tsp baking soda

2 Milka white chocolate bars (broken into pieces)

1 cup pistachios

Maldon sea salt flakes

Directions

Preheat oven to 350. In a stand mixer, cream the butter, sugars, eggs & vanilla. Next, add the flour, baking powder, baking soda and salt. Add the crumbled chocolate and mix on high to break up the chunks further. Then, add the pistachios. Chill dough in the fridge for 5-10 minutes. On a lined baking sheet, scoop out approximately 2-inch balls (they don’t have to be perfectly round or shaped). Flatten the tops slightly and sprinkle a pinch of the sea salt flakes. Bake in the oven for 10 -12 minutes. When you remove them from the oven, the edges will be brown, and the centers will still look soft, so that’s okay (If the edges aren’t a light brown, yet bake another 1-2 minutes). When you remove them from the oven, leave them on the cookie sheet for another 5 minutes before moving to a cooling rack. Enjoy!

Notes:

White chocolate chips will also work if you don’t have Milka chocolate.

Can’t find salt flakes? Sea salt from a grinder is good, too!
