Oat & Apple Cream Crumble

Ingredients
Stewed Apples
6 large apples chopped into small pieces
1 tbsp white sugar
1 tbsp demerara sugar
1 tbsp lemon juice
1/2 cup water
Base
1 1/2 cup flour
1 1/2 cup quick oats
1/4 cup white sugar
1/4 cup demerara sugar
1/4 tsp salt
3/4 cup melted butter
Topping
2 tbsp demerara sugar
1 tbsp cinnamon
Filling
1 250g block cream cheese softened
1 300 ml can of condensed milk
1 tbsp vanilla
Directions
Preheat oven to 350. Mix the apples, 2 tbsps of sugar, lemon juice and water in a saucepan. Cook the apple mixture on medium heat until the apples are soft and stew together. While your apples are cooking in a stand mixer, combine the flour, oats, sugar, salt & butter. Once your mixture is combined and has a crumbly texture, take one cup, crumble it onto a lined baking pan and sprinkle with 2 tbsp demerara sugar and 1 tbsp of cinnamon. Next, press the remaining oat mixture into a square baking dish or pie plate and bake for 12-15 minutes. While your oats are baking, combine cream cheese, condensed milk, and vanilla in a stand mixer. Whip the mixture until smooth and place into the fridge. Let your apples, base and topping cool. Once everything is cooled, spoon the apple mixture onto the base, top with the filling, and then top with the crumbled oats. Place it back into the fridge for an hour or two or overnight. This rich and sweet dessert pairs nicely with a coffee after dinner! Enjoy!
