Roasted Roma Tomato Sauce

Serves: 4-6 pieces Prep time: 30 min Cook Time: 1.5 hour

Ingredients

13 Roma tomatoes

1 bunch fresh basil

1 large yellow onion diced

1 796ml can diced tomatoes

2 tbsp herbs crushed garlic

cracked salt & pepper to taste

1 tbsp white sugar

1/4 cup olive oil

Directions

Preheat oven to 350. Chop your romas into bite-size pieces and then place them onto a lined baking sheet. Next, drizzle with the oil and 1 tbsp of Herb’s crushed garlic. Tear half the bunch of basil into small pieces and spread over the tomatoes. Sprinkle salt and pepper to taste, stir everything around, and spread out evenly. Bake for approx 1 hr. While your romas are cooking in a blender or food processor, add the can of tomatoes, sugar, remaining basil, salt & pepper to taste and 1 tbsp Herb’s Crushed Garlic. Blend until smooth, and then pour into a pot. Once the romas are done in the oven, add them to the pot with the blended tomatoes. Simmer on low/medium for about half an hour, then serve on top of your favourite pasta! Enjoy
