Roasted Beets & Carrots With Feta
Serves: 6-8 as side Prep time: 30 min Cook Time: 60 mins Total Time: 1hr
Ingredients
6 medium beets peeled and chopped into bite sized pieces
8 carrots peeled and chopped into bite sized pieces
3 shallots diced
3 tbsp extra virgin olive oil
salt & pepper to taste
1/2 tsp of each onion powder, paprika, oregano, thyme, rosemary & basil
3/4 cup feta
1 tbsp fresh lemon juice
Directions
Preheat oven to 375. In a mixing bowl add all your ingredients except feta and lemon juice. Mix and let sit for 20-30 mins. Spread onto a baking sheet (use parchment to line if you wish) and bake in the oven for 30 mins or until desired doneness. Put into a serving dish add lemon and feta while warm. Serve & enjoy!
Notes: Want a bit of crunch? add candied pecans!
