Deluxe Penne Pasta

Serves: 6 for meal Prep time: 15 min Cook Time: 40 mins Total Time: 55 mins

Ingredients

1 package ground spicy Italian sausage

1 jar 410ml pizza sauce

1 med size green pepper sliced in to inch long thin pieces

1 med onion sliced into inch long thin pieces

10 med size mushrooms sliced in half and then into thin pieces

1 small can of black cut olives

2 cups shredded mozzarella

1 package 454 g penne pasta

Directions

Turn your oven on to high broil. Slice your veggies. In a oven safe skillet cook your sausage until done. Then add your pizza sauce, peppers, onions, olives and mushrooms (Leave a little of each for the top). Cover and let simmer. Boil your penne pasta until cooked to your desired preference. Drain and add straight into your sauce mix. Add 1.5 cups of cheese to your pasta mixture and stir until it’s all mixed in and melted. Top your pasta with the remaining cheese and toppings and put into the oven for 3-5 mins (make sure the top doesn’t burn). Serve with green salad & enjoy!

Notes: It’s important to start boiling the water after you have your sauce mixture together so the flavours have time to marinate together :)
