Pulled Pork Baked Tacos
Makes: 20-24 Tacos Prep time: 30 min Cook Time: 3.5 Hours Total Time: 4 hours
Ingredients
1 pork shoulder (1.5 kg piece)
20-24 hard taco shells
Sauce
1 cup ketchup
1/2 cup honey
1/4 cup mustard
2 tbsp hot mustard
1 tbsp steak spice
2 tbsp smoked paprika
Toppings
3 cups mozzarella cheese
3 cups chopped lettuce
pickled onions & jalapenos optional
Directions
Preheat your BBQ (Indirectly, just the outside burners) or set your oven to 375. Whisk together all the sauce ingredients in a small bowl and set aside. Next, place your pork shoulder in a metal baking pan with about a 1/4 inch of water in the bottom. Top the pork shoulder with most of the sauce (reserve 1 cup for later). Cover with foil and bake for 3 hours. Once your shoulder is cooked, use two forks to pull it apart. Then, mix in the remaining sauce. Next, stand your taco shells up in a metal baking dish, fill the bottoms with the pulled pork, and then top it with mozza cheese. Place the dish back in the oven or BBQ for 10-15 minutes until the cheese is melted and the shells are warm. Top with lettuce and any of your other favourite toppings1 (Coleslaw is good on top too) Enjoy!!
Notes
Pork can also be cooked in a slow cooker.
If your using the oven a ceramic or glass dish is fine.
The pulled pork can also be frozen for up to three months and used later for more tacos or even pulled pork pizza if you don’t want or need to use it all.
