Celery Crunch Quinoa Salad

Serves: 6-10 Prep time: 30 min Cook Time: 15 Total Time: 45 min

Ingredients

2 cups cooked Quinoa

1 cup chopped cucumber

1.5 cup chopped kale

1/2 cup sweet white onion diced

4 celery stocks diced

2 green onion finely sliced

Dressing

3/4 cup apple cider vinegar

1/4 cup evoo

1/4 cup fresh diced parsley

1tsp of each salt & pepper

1 tbsp white sugar

1/2 tsp Herb’s Crushed Garlic

Directions

Whisk together all the dressing ingredients in a small bowl and set aside. Next, cook your quinoa and chop the veggies. Once your quinoa is cooked and warm, pour the dressing, mix thoroughly, and place in the fridge to cool. Once the quinoa has completely cooled, fold in all your chopped veggies. This delicious quinoa salad can be served as a standalone dish or paired with grilled chicken for a complete meal.

Notes

It can be stored in the fridge for up to 5 days.
