Peanut Butter & Jelly Breakfast Bars
Makes: 8-16 bars Prep time: 10 min Cook Time Time: 20 min Total Time: 30 min
Ingredients
2 cups rolled oats
1/3 cup all purpose flour
1/2 cup lightly packed brown sugar (we used demerara)
1/2 cup melted butter
3/4 cup peanut butter (we used natural crunchy)
1/3 cup raspberry jam
Directions
Set your oven to 350. Place parchment into a 8 inch square baking pan (make sure it over hangs). In a bowl mix together your oats, brown sugar and flour. Add your peanut butter and melted butter. Mix well with a spoon or your hands. Next pour 3/4 of your mixture into your prepared pan and press down, then spoon 4 lines of raspberry jam over the pressed oat mixture and then sprinkle the remaining oat mixture on top. Bake for 20 mins or till slightly firm. Completely cool in pan and then cut into 8 rectangle bars or 16 small square bars.
Notes: you can use other flavours of jam, substitute peanut butter for other nut butters or even add in extras like seeds or nuts!
