Serves: 2 for meal Prep time: 20 min Cook Time: 60 mins Total Time: 1 hr 20 mins

Ingredients

1 pkg puff pastry (thawed)

1/4 cup flour

2 cups potatoes thinly sliced

1 cooking onion peeled & thinly sliced

2 cups rutabaga peeled & thinly sliced

1 cup cherry or grape tomatoes halved lengthwise

1 cup fresh parsley chopped

1 med size piece of top sirloin beef cut into bite sized pieces

salt & pepper

2 tbsp water

Directions

Preheat oven to 350 degrees. Chop all your veggies, parsley & sirloin. (For size reference see picture below). Flour your prep surface and roll out both squares of pastry separately in a square shape until about 1 cm thick. Layer your veggies, steak and parsley on each sheet of pastry in the center. Sprinkle salt & pepper on top and 1 tbsp of water. Fold your pastry like an envelope, wet your fingers to help seal the edges on top (pic below of reference). Place on cookie sheet and bake for 1 hour. Serve & Enjoy!

Notes:

Portions can be made smaller by halving each pastry square and ingredients per pasty.
