Dutch Apple Baby

Serves: 4-6 Prep time: 15 min Cook Time: 25 mins Total Time: 45 mins

Ingredients

3 large eggs

1 tbsp vanilla

1/2 cup milk

1/2 cup flour

1/2 tsp salt

2 tbsp white sugar

6 tbsp salted butter

2 apples peeled and thinly sliced

3/ 4 cup brown sugar

1 tbsp cinnamon

powdered sugar to sprinkle on top

Directions

Preheat oven to 425 degrees. Place 4 tbsp butter in a 9-10 inch oven safe skillet. Put in the oven to melt the butter (don’t burn your butter!). While your butter is melting in a mixing bowl combine your eggs, flour, vanilla, white sugar, milk & salt and whisk thoroughly until smooth. As soon as your butter is melted, pour your batter into the skillet. Bake for 20 mins and then turn your oven off and leave in for another 5 mins then remove from oven. While the “pancake” is in the oven in a saucepan combine your apples, 2 tbsp butter and brown sugar. Sautee over medium heat until sauce is thick and apples are to your desired tenderness. Stir in cinnamon. Add your apple topping to the center of your “pancake” and sprinkle powdered sugar! Eat for breakfast, brunch or dessert with ice cream! Enjoy!
