Mom’s Classic Potato Salad

Serves: 8-12 as a side Prep time: 30 min Cook Time Time: 25 min Total Time: 55 min

Ingredients

8 cups Warba (New Potatoes) potatoes boiled and cut into bite-sized pieces

8 eggs boiled, peeled & chopped

1 med/large red onion diced

2 cups chopped celery

2 cups chopped carrots

1/2 cup diced fresh parsley

4 cups real mayonnaise

3/4 cup mustard

2 tbsp Montreal steak spice

Directions

Boil potatoes until you can poke a fork in them (15-20 mins) and let them slightly cool. Boil the eggs (about 10 mins), and cool them with running cold water. While the potatoes and eggs are boiling, chop the veggies and parsley. Next, cut your potatoes into bite-sized pieces and place them into a large mixing bowl. Take the cooled eggs remove the shells, chop them into pieces, and add to the potatoes. Next, add the remaining ingredients to the bowl and mix together thoroughly. Enjoy!
