Italian Deli Summer Salad

Ingredients
Dressing
half cup olive oil
1/4 cup white vinegar
1 tbsp white sugar
2 tbsp Italian seasoning
2 tbsp mayonnaise
1 tbsp water
1/2 tsp Herbs Crushed Garlic
S&P to taste
Salad
1 large head of romaine lettuce washed & chopped
1 cup of chickpeas drained/rinsed
1 cup grape tomatoes halved
150g cervelat salami sliced into strips
1 bell pepper chopped
1/2 cup shredded fresh parmesan cheese
1 cup sliced red onion
1 cup chopped cucumber
1 cup of pearl bocconcini balls or regular bocconcini halved
1 cup sliced pickled pepperoncini’s
Directions
Whisk together all the ingredients for the dressing in a small mixing bowl and let stand. Next, wash and chop all your veggies and place them in a large bowl like pictured or tossed together. Add your dressing toss & enjoy! Serve with warm garlic or focaccia bread.
Notes: You can add other meats such as pancetta or spiced salamis. Olives & marinated artichokes would add a nice flavour as well.
