Lemon Raspberry Muffins

Makes: 12 Prep time: 20 min Cook Time:20min Total Time: 40 min

Ingredients

2 cups flour

3/4 cup sugar

2 tsp baking powder

1/4 tsp salt

1/2 cup butter softened

3/4 cup milk

1 large egg

1 tsp vanilla

1 1/2 cups fresh or frozen raspberries

zest of 1 lemon

Optional

1/4 cup sugar for tops

zest of half a lemon

Directions

Set oven to 400. In a stand mixer or large bowl with a whisk, combine flour, baking soda, sugar and salt, then mix in milk, butter, vanilla, egg & lemon zest. Once everything is thoroughly mixed, fold in the raspberries. Spoon into a 12-lined or greased muffin tin. Top with optional zest and sprinkle of sugar. Bake for 20 mins. Enjoy!
