Sugar Cookie Fruit Pizza
Serves: 6-10 Prep time: 30 min Cook Time:25min Total Time: 55 min
Ingredients
Cookie Base
1 cup softened butter
1 cup sugar
1 tsp baking powder
1/4 tsp salt
1 egg
1 tbsp bourbon vanilla
2 1/4 cups flour
Topping
1.5 cups strawberry or vanilla thick Greek-style yogurt
1 cup sliced strawberries
1 cup blueberries
1 cup raspberries
Directions
Set oven to 350. Combine all the cookie base ingredients in a stand mixer and mix on high until the dough is formed and smooth. Next, using a greased or lined spring-form pan, press the dough into the bottom of the pan as evenly as possible and then prick the surface of the dough with a fork about 10 times. Bake for 20-25 mins. Edges will be slightly brown. Let it stand in the spring-form pan on the top of the stove for about 15-20 minutes as the heat and sugar will still be baking the cookie. Next, remove it from the pan, and once completely cooled, top with the yogurt and berries! Will last in the fridge 3-4 days covered. Enjoy!
