Springtime Pie
Serves: 6-8 Prep time: 25 min Chill Time: 60 min Total Time: 1hr 25 min
Ingredients
1 litre whipped cream
1 tbsp vanilla
2 tbsp sugar
1 85-gram packet of raspberry Jello
2 cups diced strawberries
1 cup mini marshmallows
Crust
2 cups gram crumbs
1 tbsp sugar
1/2 cup melted butter
Directions
Combine the whipped cream, vanilla, and 2 tbsp sugar in a stand mixer on med-high. Mix until a heavier cream forms, then add the Jello powder. Mix until stiff. Next, fold in the diced strawberries and mini marshmallows. Set aside. In a bowl, combine the graham crumbs, sugar and butter. Once thoroughly mixed, press the mixture into a pie dish and then fill with your cream mixture. Chill in the fridge for one hour. Top with extra berries or something festive. Enjoy!
Notes:
If you aren’t going to serve right away, make sure to cover it in the fridge.
Other flavour combinations could include lemon Jello, fresh blueberries, strawberry Jello, and fresh raspberries.
