Greek Warba Potato Salad

Serves: 4-6 Prep time: 15 min Cook Time Time: 15-25 min Total Time: 30-40 min

Ingredients

2 lbs warba potatoes

1 large bell pepper diced

1 small red onion diced

1 cup crumbled feta

1 large lemon juiced

1 tbsp souvlaki seasoning

3 tbsp extra virgin olive oil

1 tsp herbs crushed garlic

S&P to taste

Directions

In a pot, boil your potatoes until soft (not falling apart). Drain the water and let cool until they are cool enough to handle. Cut the potatoes in half or quarters depending on the size, and place them into a mixing bowl. Next, add your lemon juice, souvlaki seasoning, garlic, olive oil and salt & pepper. Stir and put into the fridge to cool further (10-20 mins). Add your diced peppers, diced onion, chopped parsley and crumbled feta. Stir and enjoy!

Notes: Make sure you add the lemon juice, garlic and seasonings while the potatoes are still somewhat warm, as they will absorb the flavours better.
