Chorizo Breakfast Taco's
Serves: 4-6 Prep time: 20 min Cook Time Time: 15 min Total Time: 35 min
Ingredients
6 eggs whisked with 2 tbsp water and cooked
200g chorizo sausage chopped and cooked
1 cup fresh spinach
1 cup shredded Mozzarella
8 tbsp Mrs. Renfro’s Chipotle Nacho Cheese Dip
8 Grimm’s mini flour/corn tortillas
Directions
Set your oven to 375. Cook your eggs and chorizo in separate pans and let slightly cool. Lay your tortillas on a cookie sheet and spread a tbsp of cheese dip on each of them, then, next on one side of the tortilla, layer your egg, chorizo, mozza and spinach. Fold over your tacos and place a cookie sheet on top to keep them folded. Place in the oven for 8 mins, then remove the top cookie sheet and keep in the oven for another 7 mins. Serve with fresh avocado, hot sauce, fruit and or breakfast potatoes. Enjoy!
Notes: If you prefer them to be a little crispy, broil for a minute at the end.
