Sticky & Sweet Bacon Wrapped Chicken
Serves: 4-6 Prep time: 20 min Cook Time Time: 25 min Total Time: 45 min
Ingredients
8 chicken fillets
8 strips of Johnston’s thick bacon
1/2 cup ketchup
1/2 cup honey
1/4 cup mustard
1/4 cup demerara brown sugar
1 heaping tbsp Herb’s Crushed Garlic
1 tsp crushed chillies
Directions
Mix all the ingredients except the chicken and bacon in a medium-sized bowl to make the sauce. Next, place a small amount of the sauce on top of the chicken fillets and then wrap each with a piece of bacon, securing it with a tooth pic. Once all the fillets are wrapped, put them into a dish and cover them with most of the remaining sauce leaving about 1/2 a cup. Let sit in the fridge for an hour to marinate before cooking. Turn your grill to medium-high and place your bacon-wrapped chicken pieces on the top grill rack for about 10-15 mins then move them to the main grill for 1 minute on each side and baste before turning over with the remaining sauce. Serve with your favourite salad! Enjoy!
