Fresh Tri-Colour Carrot Salad
Serves: 6-8 as a side Prep time: 25-35 min Cook Time Time: 0 min Total Time: 25-35 min
Ingredients
10-12 tri-colour carrots peeled & julienned
2-3 green onions chopped
1/4 cup fresh parsley diced
2 tbsp fresh basil chopped
1/3 cup olive oil
2 heaping tbsp real mayonnaise
2 tbsp white vinegar
1 heaping tbsp white sugar
1 tsp Herbs Crushed Garlic
1 tsp onion flakes or powder
salt & pepper to taste
Directions
Peel & julienne the carrots. Set aside in med sized bowl. Chop the green onion and fresh herbs. Add to bowl with carrots. Whisk the remaining ingredients in a small bowl, pour over the carrots, and mix thoroughly. Chill for 10-15 mins before serving. Enjoy!
Notes: Nuts or dried cranberries would also add some great flavour and texture/crunch to this salad.
