French Bread
Serves: 2 loaves, Prep time: 25 mins, Rest Time: 1 hour, Cook time: 20 mins Total time: 1 hr 45 min
Ingredients
2 cups warm water
1 tbsp yeast
2.5 tsp sugar
5-6 cups flour
2.5 tsp fine salt or garlic salt
2 tsp Italian seasoning (optional)
1 tsp olive oil
Directions
In a mixing bowl whisk together yeast, sugar, and warm water. Let sit 5 minutes to proof the yeast. Add 2 cups of flour and the salt and seasonings to bowl. Mix thoroughly. Continue to add the remaining flour 1/2 a cup at a time until dough is smooth. Form a ball and rub the olive oil around the dough. Let rest 15 minutes.
Divide dough into two balls. On a floured surface, roll out one dough ball into a rectangle about 8 inches long. Starting at the long side, roll the dough into a cylinder. Then fold both ends inward and pinch the seams closed. Round the edges and place on a baking sheet seam side down. Repeat with second dough ball.
Let the loaves rise in a warm spot for 45 minutes. Then make three diagonal slashes across the top.
Preheat oven to 400 F. Bake for 17-20 minutes or until the tops are golden brown. Brush the tops with melted butter if desired. Wait several minutes before slicing. Makes great garlic bread!
