California Style Caesar Potato Salad

Serves: 6-8 as side Prep time: 30 min Cook Time: 20 mins Total Time: 50 mins

Ingredients

8 cups baby potato’s

1 bunch radishes sliced and halved

1 cup parmesan grated

1 cup mayonnaise

3/4 cup FRESH chopped dill

1/4 cup Olive Oil

2 heaping tbsp. Herbs crushed garlic

salt & pepper to taste

Directions

Boil potatoes whole until cooked and then cool. While your potatoes are boiling, into a large mixing bowl add your mayo, olive oil, parmesan, dill, garlic, salt & pepper. Mix together and let sit. Once your potatoes have cooled cut them in half and add to your dressing mixture along with your sliced radishes. Mix everything up, place in a serving bowl and grate some extra parmesan on top! Enjoy!

Notes

It’s very important to use fresh dill in this recipe to get the full flavour profile.

To speed up cooling of potato’s either run under cold water or place in a bowl in your freezer for 5-10 mins
