Hearty Apple Blueberry Spice Muffins
Serves: 12-15 Prep time: 20 mins, Cook time: 25 mins, Total time: 45 mins
Ingredients
1/2 c butter
2 tbsp sugar
2 tbsp brown sugar
1 large egg
1 c plain yogurt
1 1/2 c flour
1/2 c whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/4 tsp cloves
1 c shredded apples
2 c chopped apples
1/2-3/4 c frozen blueberries
A couple tablespoons brown sugar for topping.
Directions
Preheat oven to 375. Grease muffin tin or line with papers.
Beat butter and sugar until fluffy. Make sure to scrape the sides of the bowl so it’s all being mixed. Add the egg and mix well. Beta in the yogurt. At this point the batter won’t look smooth.
Add all the dry ingredients and shredded apples. Stir together until just combined. Then add the chopped apples and frozen blueberries.
Do not over mix.
Using a spoon, evenly divide the batter into the muffin tin. The cups will be very full. You may not be able to fit all the batter into one tin. If desired, sprinkle a little brown sugar on top before baking.
Either use another muffin tin, or set batter aside until first batch is finished.
Bake at 375 for 20-25 minutes or until a toothpick comes out clean. Let sit for 5 minutes, and then remove to a wire rack to finish cooling.
Store in an airtight container for 3 days or in the fridge 5-7 days. These can also be frozen once they have cooled.
