Tera's Lemon Poppy Cookies
These came about as part of a staff cookie exchange. Everyone LOVED them, and the recipe got passed around here. Then they came out again at Easter, and now we want to share the recipe with you! This could be added to our roster of homemade cookies here at the store, so let us know in the comments if you think we should start selling these!
Serves: 30-36 Prep time: 25 mins, Cook time: 10 mins, Total time: 35 mins
Ingredients
Cookies
1 c butter, soft
1 1/2 c sugar
1 large egg
1 tsp vanilla
1 pouch lemon zest essence Dr. Oetker (aisle 3b)
1 tbsp lemon zest
2 tbsp poppy seeds
1/4 c lemon juice
2 1/4 c flour
1 tsp salt
1 tsp baking powder
Glaze
1/2 - 1 c icing sugar
1/2 - 1 tbsp lemon juice
Directions
Preheat oven to 350.
Combine poppy seeds and lemon juice and set aside. Cream butter and sugar until sugar is dissolved. Add eggs, vanilla, lemon zest, lemon essence, and cream again. Add lemon poppy seed mixture, and combine. Add flour, salt, baking powder, and work into a dough. Scoop onto parchment or lined cookie sheets using small cookie scoop. If you don’t have a cookie scoop, just use a table spoon and roll between your hands to make about a 1” ball. Flatten slightly. Bake at 350 for 10 minutes. Should barely get golden brown on the edges.
Glaze
Add lemon juice to icing sugar, stir until it is a thick consistency. Only add enough lemon juice to get the sugar wet. It gets runny quite easily. You can also a few drops of warm water to dissolve the sugar.
Drizzle over cookies, the glaze should dry/harden slightly.
