Stone Fruit Salad With Basil White Balsamic Vinaigrette

Serves: 2-4 for meal. 6-8 as side Prep time: 25 min Cook Time: 0 Total Time: 25 mins

Ingredients

1 large bunch kale, stems removed and finely chopped

2 small/med size radicchio chopped

1 cup fresh cherries pitted and cut in half

1 nectarine thinly sliced in crescent moon shape

1 red plumb thinly sliced in crescent moon shape

3/4 cup crumbled feta

1/2 cup candied pecans or any nut of your choosing

1/4 cup olive oil

1/2 cup white balsamic

2 tbsp finely chopped basil

1 tbsp finely chopped parsley

salt & pepper to taste

Directions

In a small bowl mix your olive oil, white balsamic vinegar, basil, parsley, salt & pepper. Let stand.

In a large bowl toss all other ingredients together, add dressing & enjoy!

Notes

If you don’t have fresh herbs dried will work.

Serve with herbed chicken to make a full meal salad.
