Patio Parfaits

Serves: 6-8 Prep time: 30 min Cook Time: 10 mins Total Time: 40 mins

Ingredients

1 lb raspberries

1 tbsp white sugar

1 tsp lemon juice

1 l whipping cream

2 tbsp vanilla

2 tbsp icing Sugar

1 pkg chocolate pudding (powder)

1 pkg Milano lady fingers

1 dark chocolate bar

Directions

In a sauce pan put 3/4 of your raspberries along with the white sugar, 1 tbsp of vanilla and lemon juice. Cook on medium heat until berries start to boil and become stewed. Remove raspberries from heat and push berries through a sieve removing the seeds from the berry mixture leaving just the syrup. Cool syrup in the fridge or freezer.

In a stand mixer or using a hand mixer whip together whipped cream, icing sugar and 1 tbsp vanilla till almost stiff. Remove one cup and set aside. Add pkg of chocolate pudding and whip until stiff.

Make your parfaits. You can use wine glasses, cups, bowls or a trifle bowl there are no rules here! Layer your lady fingers, chocolate mousse, raspberry sauce and fresh raspberries. Garnish with whipped cream and grated chocolate! Enjoy!
