Speculaas Spiced Apple Pancakes

Ingredients
Pancakes
1.5 cups flours
2.5 tsp baking powder
.5 tsp salt
1 heaping tbsp white sugar
1 tbsp bourbon vanilla
1 1/4 cups milk
1 egg
3 tbsp melted butter
1 cup shredded Granny Smith Apple
Spiced Apple Topping
3 granny smith apples sliced
1 heaping TBSP Speculaas Spice
1/4 cup water
1 tbsp lemon juice
Directions
In a mixing bowl, combine the flour, salt, sugar, and baking powder. Create a well in the center, then add the egg, vanilla, milk, and melted butter. Whisk everything together until the batter is smooth. Gently fold in the shredded apple and set the batter aside.
For the spiced apples, place the sliced apples, speculaas spice, water, and lemon juice in a pot over medium heat. Stir and cook until the apples soften to your preferred tenderness. If the mixture becomes too thick, add water, one tablespoon at a time. When your apples are almost ready, cook the pancakes over medium-high heat. This batter will yield about 9-10 pancakes.
Serve with syrup or whipped cream. Enjoy!!
Notes:
If you prefer to skip the sautéed apples, add 1/2 tablespoon of speculaas spice directly into the pancake batter.
These pancakes freeze well for up to 3 months or can be refrigerated for up to 5 days. Reheat them in the microwave or toaster for a quick and easy breakfast!
