Millionaire Bacon Sandwich
Serves: 4 Prep time: 20 min Cook Time Time: 50 min Total Time: 1 hr 10 min
Ingredients
1/2 lb Johnston’s thick-cut bacon
2 tbsp demerara brown sugar
1 tbsp cracked black pepper
2 tbsp honey
8 iceberg lettuce leaves
1 avocado sliced
8 slices Portofino sourdough bread
1 cup softened cream cheese
2 tbsp mayonnaise
1 Jalapeno diced (with seeds)
1 tsp herbs crushed garlic
S&P to taste
Directions
Set your oven to 375. In a small bowl mix together the brown sugar, honey and cracked pepper. Next place a piece of parchment on the cookie sheet and then place a cooling rack on top. Line the rack with the bacon strips and coat each piece (flip) with your honey/sugar/pepper mixture. Bake in the oven for 40-50 minutes (keep an eye though as all ovens are different and you don’t want to burn your bacon). While your bacon is cooking combine the cream cheese, mayonnaise, dice jalapeno, crushed garlic and salt and pepper in a small bowl and set aside. Once your bacon is cooked (you want it crispy-ish (not burnt though) you can build your sandwich. Toast your bread, slather each side in the cream cheese mixture, and add 3 slices of avocado, lettuce and of course the millionaire candied bacon! Enjoy!
Notes: If you don’t like spicy remove the seeds from the jalapeno.
