Marmalade Orange Pound Cake

Serves: 4-6 Prep time: 20 min Cook Time Time: 60 min Total Time: 80 min

Ingredients

2 cups flour

2 tsp baking powder

1/4 tsp salt

3/4 cup softened butter

3/4 cup sugar

2/3 cup milk

juice of two marmalade (Seville) oranges

zest of two marmalade oranges

2 eggs

1 tbsp vanilla

Icing

2 cups icing sugar

3 tbsp milk

1 tsp vanilla

zest of half a marmalade orange

Directions

Set your oven to 350. Cream the butter, sugar, and vanilla in a stand mixer or bowl. Then mix in the eggs, followed by the milk, orange juice, and orange zest. Next, add the flour, salt & baking powder and mix or stir until everything is combined. Grease a loaf pan with butter and pour in the mixture. Bake for 1 hour or until a toothpick comes out clean. Remove from the oven to cool. To make the icing, combine the milk, icing sugar and vanilla in a bowl and then add the orange zest. Ice your pound cake once it’s cooled. Store for 3-5 days in an airtight container. Enjoy!

Notes:

If you prefer a thicker icing, add more icing sugar to your icing mixture, a tbsp at a time.
