Luscious Lemon Tart

Serves: 4-6 Prep time: 20 min Cook Time Time: 35 min Total Time: 55 min

Ingredients

1 cups butter softened

3/4 cups icing sugar

2 cups flour

1 tbsp bourbon vanilla

1 tbsp poppy seeds

zest of 1 lemon

1/2 pint of strawberries sliced

1.5 cups lemon pie filling or lemon curd

Directions

Set your oven to 350. Add all ingredients except for the strawberries and lemon curd to a stand mixer and mix until dough is formed. Press into a greased pie dish and bake for 30-35 minutes. Remove from oven, turn upside down, and let cool. Remove from pan. Once your tart is cooled top with the lemon filling and garnish with sliced strawberries. Serve on its own or with some whipped cream.

Notes:

You can sub-blueberries or raspberries instead of strawberries.
