Ham Breakfast Hash

Serves: 4-6 Prep time: 25 min Cook Time Time: 30 min Total Time: 55 min

Ingredients

4 cups fingerling potatoes chopped

2 cups yams chopped

3 cups ham chopped

1 small sweet onion diced medium

1 large shallot diced small

1 large green pepper diced medium

1 large red pepper diced medium

2 tbsp Worcestershire sauce

2 tbsp steak spice

5 tbsp butter

Directions

In a large pot, parboil your potatoes & yams (you can do this together or separately). While your potatoes are cooking, chop all your vegetables and ham, and place them into a frying pan with two tbsp of butter, Worcestershire sauce, and steak spice. Cook on medium-high until veggies soften. Once your potatoes are parboiled strain the water and add them to a separate frying pan and cook on med-high heat with 3 tbsp of butter. Once your veggies start to soften add them to the potato/yam mixture and cook together until everything has a nice golden glow and the veggies are fully softened. Serve as a side or make breakfast bowls by topping with eggs and a side of toast. Enjoy!

Notes: You can use any potatoes I just chose these for the recipe as they have a nice buttery texture.
