Grilled Chicken & Asparagus Pesto Pasta
Serves: 4-5 Prep time: 10 min Cook Time Time: 30 min Total Time: 40 min
Ingredients
2 boneless skinless chicken breasts
3 tbsp All Of Oils Tuscan Herb olive oil
salt and pepper to taste
1 lb asparagus (woody ends cut off)
12 ounces of your favourite pasta noodles
1/2 cup pesto
1 whole lemon juiced
1/2 cup shredded parmesan
3 tbsp toasted pine nuts
3-4 tbsp basil torn
Directions
In a pot boil your pasta until al dente then drain and put it in a large bowl and stir in the pesto, parmesan cheese and lemon juice. While your pasta is cooking place your chicken in some foil and season with 2 tbsp of All Of Oils Tuscan Herb oil and salt and pepper. Close the foil and place on bbq on top rack with med to high heat until cooked through (about 15 mins). Remove from foil and place on grill for 1 min on each side and then chop into pieces. Drizzle asparagus with 1 tbsp of the remaining olive oil, S&P, and place on your grill sideways so they don’t fall through the grates and rotate often. Once softened remove and chop each piece of asparagus into 4-5 pieces. Add the asparagus, chicken and toasted pine nuts into your pesto pasta mixture. Sprinkle with extra cheese and basil. Serve with a salad or grilled garlic toast. Enjoy!
Notes:
If you don’t have All Of Oils Tuscan Herb Olive Oil You can use regular olive oil and Italian seasoning.
