Grilled Balsamic Chicken
Serves: 3 Prep time: 10 min Cook Time Time: 30 min Total Time: 40 min
Ingredients
3 boneless skinless chicken breasts
2 tbsp Italian spice
2 tsp chilli flakes
1/4 cup olive oil
3 slices of havarti
3 tbsp pesto
3 slices of tomato
1 avocado thinly sliced
balsamic glaze to drizzle
Directions
Preheat your grill to high. On a piece of tinfoil drizzle half of the olive oil and sprinkle half the spices. Place your chicken breasts on top and top with the remaining oil and spices. Close the foil and place it on the top rack of the BBQ. Turn the grill down to med-low. Cook for 20/25 mins. Remove from foil and grill on each side on the main rack for 2 mins on each side. After the first flip, add your havarti to each piece of chicken. Remove chicken from the grill, spread a tbsp of pesto on each, then layer the avocado and tomato. Drizzle with balsamic glaze. Serve with a side salad or grilled potatoes, or even cold pasta. Enjoy!
Notes:
You can use any white cheese of your choice.
If you don’t have a grill, you can bake in the oven in foil and skip the grill step.
