Green Tomato Frittata
Serves: 6-8 Prep time: 10 mins, Cook time: 20 mins Total Time: 30 min
Ingredients
4 eggs
2 medium green tomatoes (2 cups chopped)
2 c leeks, chopped
1 1/2 tsp salt
1/4 tsp pepper
2 egg whites
basil, minced, to taste
2 tbsp parmesan
cooking oil
Directions
Add a tbsp or so of olive or cooking oil to a large oven safe pan. Add leeks and saute for 5-7 minutes until tender and turning golden. Add tomatoes and 1/2 tsp salt. Saute for a few more minutes until tomatoes are tender.
Remove leek/tomato mixture from heat and let cool for 5 minutes. Preheat your broiler to low broil. Lightly whisk the eggs together. Add tomato/leek mixture and remaining salt, and stir agan.
In another bowl beat the egg whites until stiff but not dry. You may need a hand mixer for the easiest results. Gently fold the egg whites into other egg mixture, 1/4 at a time.
Add a bit more oil to the oven safe pan and heat over medium heat. Pour egg mixture in and sprinkle with the basil and parmesan. Cover with a lid. Reduce the heat to low and let cook for 6-8 minutes. You want the eggs to be almost set.
Once ready, transfer the pan into the broiler for about 2 minutes. Cook until top is golden brown. Keep an eye on it as it will go from ready to burnt very quickly!
Remove from the oven, slice and enjoy!
