Garlic Chicken Skewers With Sundried Tomato & Basil

Ingredients
3 chicken breasts cust into chunks
sundried tomatoes in oil
fresh basil
1/2 cup grated fresh Parmigiana Reggiano
1/2 cup butter
1.5 tbsp Herb’s Crushed Garlic
1 tbsp dried parsley
pepper to taste
5 wooden skewers
Directions
Prepare the Garlic Butter:
In a small microwave-safe bowl, combine the butter, minced garlic, parsley, 1 tbsp of grated Parmigiano-Reggiano, and black pepper to taste. Microwave in 20-second intervals until melted. Stir well and set aside.Preheat the Oven:
Preheat your oven to 375°F (190°C).Assemble the Skewers:
Thread the skewers in the following order:2 pieces of chicken (or 1 if preferred)
1 sundried tomato
1 basil leaf
Repeat until the skewer is full.
Bake the Skewers:
Place the assembled skewers on a baking rack set over a cookie sheet.
Baste the skewers with the garlic butter mixture.
Bake for 10 minutes.
Flip & Baste Again:
Flip the skewers, baste with more garlic butter, and return to the oven for another 10 minutes.
Repeat this process one more time (total baking time: 30 minutes).
Broil for a Crispy Finish:
Set the oven to broil on high and cook the skewers for an additional 5 minutes, or until slightly golden and crisp.
Serve & Enjoy:
Remove from the oven and sprinkle with the remaining grated Parmigiano-Reggiano.
Serve hot with rice or a fresh salad. Enjoy!
