Fresh Corn & Avocado Salad

Serves: 8-12 as side Prep time: 30 min Cook Time: 20 mins Total Time: 50 mins

Ingredients

12 corn on the cob cooked & kernels cut

6 large avocados peeled & cut into cubes

1.5 cups crumbled feta

1 small clamshell cherry or grape tomatoes halved

1 small red onion thinly sliced

1/2 cup diced fresh parsley

2 tbsp lime juice

1 tsp salt

2 tsp pepper

1/4 cup olive oil

Directions

In a large bowl combine your corn, feta, onion, parsley, olive oil, lime juice, salt and pepper. Then add your tomatoes and avocados and toss lightly. Serve immediately or next day. Enjoy!

Notes: To make a delicious Mexican inspired version swap out your feta with Cotija, your pepper with taco seasoning & your parsley with fresh cilantro!
