Creamy Tomato Parmesan Soup
Serves: 4 Prep time: 15 min Cook Time: 40
Total Time: 55 mins
Ingredients
1 tbsp olive oil
8 roma tomatoes halved
4 cloves of garlic
1 med white onion diced
2 tbsp balsamic vinegar
1 tbsp white sugar
1 cup heavy cream
4 cups vegetable stock
1/2 cup grated parmesan cheese
1 tsp salt
1 tsp pepper
Directions
Preheat oven to 400 degrees. In a oven safe pot add tomatoes, onion, garlic, salt, pepper, balsamic vinegar and sugar. Roast in the oven for 20-25 minutes. remove pot from oven and add in cream and stock. Back into the oven for another 15 mins. Remove from oven and use an immersion blender or regular blender and puree until smooth. Add to oven for another 5 minutes and then add parmesan cheese and additional black pepper to taste. Serve into bowls adding 1 tsp of addition cream, a sprinkle of parmesan cheese and more pepper if desired. Enjoy!
Notes: like a little bit of spice? Add a tbsp of chilli flakes to your tomato/onion mixture before roasting!
