Broccoli Cheddar Soup
Serves: 4-5 for meal. Prep time: 10 min Cook Time: 45 mins Total Time: 55 mins
Ingredients
2 large heads of broccoli chopped (small & bite sized pieces)
1 large onion diced
1 stick butter
1 tbsp herbs crushed garlic
4 cups chicken broth
1 cup half & half cream
1/3 cup flour
1 cup shredded cheddar cheese
1 tsp salt
2 tsp pepper
Directions
In a large pot over med/high heat melt butter. Add onions & garlic and sauté till soft. Add flour to the onion/garlic/butter mixture until you have a paste then add your chicken broth, cream, salt & pepper. Bring to a slight boil. Add broccoli and simmer on the stove for 30-45 mins or until broccoli is soft. Stir in cheddar until completely melted. Serve topped with extra cheddar and cheesy bread! Enjoy!
Notes: Want soup extra cheesy? add an additional cup of cheddar!
