Cranberry Goat Cheese Harvest Salad

Serves: 4-6 Prep time: 20 min Cook Time Time: 10 min Total Time: 30 min

Ingredients

Dressing

1/4 cup olive oil

1/2 cup apple cider vinegar

2 tbsp grainy mustard

s&p to taste

Salad

1 large bunch of kale washed and chopped

1 cup cucumber chopped into bite-sized pieces

1 cup celery chopped

1 package of Woolwich or similar cranberry goat cheese

1/3 cup pumpkin seeds

2 cups cooked quinoa

Directions

Pre-cook the quinoa and let cool (put in fridge or freezer for about 10 mins or cook the day before). In a small bowl, whisk together all the dressing ingredients and let stand. In a large bowl, add all the salad ingredients and toss with dressing! Enjoy as a side salad or as a meal with grilled chicken.
